The simplest solution is to find an example of one of your files in the Finder. Choose "Get Info." Click the arrow next to "Open with:" Then choose the word processor you want as the default for that type of file. Then click the "Change All . . ." button and agree to the change.
I realize this does not solve the problem of Bean overtaking all other preferences. (I don't use Bean, but when I've tried it, it never seemed to do this. I agree, it could be a Copy/Paste program issue.) But it will at least get you back to Pages as your default.
