As to 3: Assuming the data you want to write on the DVD fits its capacity (4.7GB), then any number of utilities (including OSX's Disk Utility) will do the job. Even a drag, drop and dvd eject will work.Do not totally understand 1 and 2 as to what the issue is that you are asking about.
Toast can handle the writing of mega GBs of data spanning multiple DVDs. Toast does not support spanning of compressed data onto a DVD such as a movie DVD.
If multiple copies of an existing image file is wanted, then utilities like Toast can easily handle that.
Many folks use DVD2oneX (DTOX) to verify the logical integrity (removing 'fake' VOBs for example) or select specific sections (main feature for example) of the MactheRipper (MTR) output then burn the DTOX created image with Toast.

Try burning to an image instead of straight to disc. Check the size of the image. It should be 4.36 GB or smaller. Once DVD2onex has finished, mount the resulting disc image on the desktop and use DVD Player to run it and see how it looks. If it's O.K., burn it to a DVD.Sunday, August 30 2009 @ 05:55 PM PDT

1 and 2You can burn the image again using the burn DVD-image command under the Advanced menu.
What kind of DVD-R medium are you using?
Some types not always provide the right size information.
Don't use too cheap stuff (they will last not very long)
Taiyo Yuden is a very good brand!

Select use temporary for the Image location
To do this goto the preferences, than select Burning, here you will find it.
