Ok. Here's a full how-to.
Only works in Safari (I have Safari 3.0.3 beta). Don't know about earlier versions.
1. Open the relevant youtube page that plays the video. Say:
http://www.youtube.com/watch?v=1prrFe87VGc
2. Select "Activity" from the "Window" menu.
3. You will get a list of downloaded items with the relevant window in bold.
For instance I get
VERSIONTRACKER
http://.....
Youtube - Red Dwarf : The canaries
http://

4. The file you want looks something like this:
http://....youtube.com/get_video?video_id=1prrFe87VGc
The last part is the same as the video id in the url. Sadly the "..." part differs from video to video and is not in the html source, but fetched by the javascript.
The video is most easiest found by looking at the size column, being several MB large.
5. Double-click the file in the activity window. This will download a get_video file. You can see the download in the Downloads window. Change the name to something usable and with the extension ".flv" (without quotation marks). It is playable in VLC video player.
Disclaimer. Youtu

>I assume you mean the Activity Monitor. I opened Activity Monitor, and identified the Youtube process, but saw no way to download a file from there. Can you explain further?

You can just double-click the video file in the activity window (Window menu, select Activity).

(Using Safari 3.0.3)
Select "Activity" from the "Window" menu when a youtube video is playing in a window.

To convert a Youtube file go to the web page and then locate your activity window. After you are in the activity window, go to the file that is around 9 MB (That's usually the size I've found) and double click. An automatic download should appear.
When it's finished downloading, you should have a file on your desktop that says 'get video' after you have that, you'll have to download a FLV converter. I use ISwipe and it works very well. Once you drag and drop that into ISwipe you can choose a number of different file types and when it's finished (usually takes about 30 seconds) you can view your video.

This process works on most websites so you don't need to have the PodTube at all and it's completely free.
