Slimserver. You don't have to run it thru a Squeezebox - it can easily be used as an Itunes replacement (runs in web browser) and handles all file types.

Just point it at your music files directory.

Try Songbird. It's in alpha stages but it's what I use on my linux box. It's stable and might be something you might like.

Tried VLC? It would seem to meet your requirements except for LAME encoding (it is only a player). For encoding, Max is a useful freeware option.
I too often find that all the resource-hogging eye candy in iTunes gets in my way.

It's not a question of being old school, but rather a healthy desire to escape from the velvet-gloved tyranny of the market driven commodification of everything that makes life worth living. I too am heartily sick of the spin and the hype of this substitute for living a meaningful life that these giant corporations have ensnared us in.
