It is not a problem with the app. AIFF files do not contain meta-data.

There is no place in an AIFF to put the tags.

Why use Sound Converter to convert MP3s to AIFF, then import the AIFF into iTunes? You can use iTunes to import the MP3s, then convert the MP3s to AIFF. To do that, set iTunes' importing preferences to AIFF. Import the MP3s, select them, and choose "Convert to AIFF" in the Advanced menu.
