Do you have Shapeshifter? If you do, it's the culprit. Just load the Shapeshifter system preference pane and choose the "exclude" tab. Have it find iTunes and exclude it and you'll be back in action. The only trouble will be that your interface will return to Aqua whenever iTunes is in the front. If you want continuous theme GUI presentation you'll need to revert to 7.2 which you can pick up here:
