HexEdit's Read Me document explains exactly what to do with this situation. It's Apple's fault, not HexEdit's. The solution:

Download RCDefaultApp from VersionTracker, install it, then open the DefaultApps pane in System Preferences. Click on the 'Extensions' tab and make sure ".dmg" links to DiskImageMounter.app. You shouldn't have any more problem with disk images launching HexEdit after making this change.

Hmm that solution is a lot of extra work.

Whenever another app takes over a certain file type, just right click on the file, Get Info, select Open With drop down menu, select the correct app then click the Change All button.

That will set everything right. =)
