Transmit is a good one but I recommend Yummy FTP as the most Mac like ftp program out there after evaluating all of them last year. With Yummy, as with others, you can specify which text editor to use for opening and saving remote files.
What I like about Yummy is that the interface window is just like a Finder window with List and Column views. The List view even has the little triangles to display the contents of folders, something that Transmit omits.
