Differences and similarities between Disk Utility and Encrypt This:

  • Disk Utility requires significantly more user interaction. You cannot drag a group of icons to the Disk Utility icon and have it automatically create an encrypted disk image in the same location as the original files. Encrypt This only asks for a pass-phrase when files are dropped onto it, no other action is required.
  • Encrypt This is an AppleScript, not a stand-alone application. It simply executes Apple's command-line disk utility included in every Mac OS X installation, so the hard work of encryption is done by stock Apple software, not the Encrypt This application.

All feedback is appreciated. Feedback on how Encrypt This specifically works on a particular system is even more useful.

Exactly. Maybe 10.3's Disk Utility doesn't have that capability, but I'd be surprised if it didn't. I never tried.
