It's not Gates-like, it just seems that you are wedded to using the file system as a way of organising you photos; that's fine - but iPhoto is designed so you don't have to muck about with the file system. It's a bit like complaining that database manufacturers are "Gates-like" because they insist on putting data in relational tables rather than files.Learn how to actually use the program, look at how you can tag photos with metadata and you'll find it'll do what you want.
I presume you have the same complaint with iTunes?

Drag photos to the Finder and now you have jpeg copies... wasn't that easy?Also, iPhoto6 has an option to leave photos where they are on import, though I don't use it myself.
