HP's traditional Mac drivers used Postscript, which is much cleaner and precise than PCL 5 or 6 especially for color printing.
You need to check on the capabilities of the printer itself to see which language it supports. The low-end HP printers do not have Postscript as an option. For example, the Color LaserJet 3600 uses PDL instead.
If you want true Postscript support, you need to look at the specs carefully before purchasing and that is what the Mac drivers will use presumably use by default.
