You weren't looking all that hard then, I guess? Because Audio Hijack Pro has been out for years and not only allows recording from standard audio inputs to almost whatever audio format (with lots of customization available for MP3/AAC or whatever recording). It also has plug-in support to fine-tune the sound, and you can mix sound from other applications and/or just record the sound from any other application. I started using it at least 2 years ago for recording streaming audio files to MP3 files I could bring to English classes for presentations to groups, discussion of news stories, etc.

That said, while Audio Hijack Pro is great, it's not free. Hard to beat that. And it sounds like for basic input recording, this may be more intuitively simple.
