To reply to my own comment, I stand corrected. I went back and compared SubEthaEdit to Smultron for a number of my "large" files and found that the performance was roughly equivalent. And with the convenient toolbar option of turning off syntax coloring, performance actually improves quite easily compared with SEE.
Now if I could only get Smultron to show up in "Open with..." in Finder.
