while the iPod is plugged in and updating, a progress bar fills up on the iPod itself. after that the apple appears. i believe that's when you unplug it, and I think a message displays in the updater (on the Mac) telling you to do so. I think i had to reset it once (which in itself is weird on the new iPods) but after that I plugged it back in and it was recognized, I ejected and unplugged it and it was fine. It seems LOTS of people are having the same problems you are - so I guess you can take some solace in the fact that it's not *you*. People like you should make Apple aware of these issues - Apple doesn't monitor VT so all the noise here isn't going to get to them.
