Google gears already exists for Firefox and is coming soon to Safari/Webkit. It is also free and BETTER than this idea. It will allow you to use your web apps offline.
Chrome already does something similar to this as well. It lets you make dedicated launch/app icons for mail, calendars, etc and runs them in their own process. If you're a little patient, you'll get this app and more for free within a month.
