I just poked through iTunes 8....
Holy frickin' heck!!!!

1) You can't turn off links to the store from your library (looks like it might just be for currently playing/selected songs, which doesn't bother me THAT much)
2) You can't turn off show genre when browsing!
3) This is the one that kills me: YOU CAN'T SET THE SPECS FOR HOW YOU WANT YOUR MUSIC RIPPED (bit rate, normal vs. joint stereo, etc.) or not that I see anywhere.

I'm finicky about my ripping settings. To not be able to control them is a personal affront to me.

You can easily change your import settings. They have now moved to an easier place-General - Import Settings.

I don't understand your other complaints.
