The new Vuze interface is completely removable. You can configure Azureus to use the same old Azureus 2.0 interface. To disable the Vuze interface:

Preferences > Interface > Start > Check the "Start in advanced view" box (and probably restart Az.)
View Menu > Leave only the Toolbar selected
Click the little white pill in the upper-right-hand corner of the window.

There you go, back to the old interface.
