I want to know if this will maintain the idea of separate text files for each email. I believe that is safer and more stabile than databases.

Try using Sylpheed, which uses the MH style mail. It is X11-based, but you can make it look very OS X-ish with a decent GTK+2 theme. If you have fink, install the sylpheed package and then the glossy-p package and follow the directions given for "fink describe glossy-p".
