Both Laminar's website, and my X-Plane autoupdater say the latest version is 8.5rc3

Same here, maybe the final X-Plane is just the same as RC-3 except for that one plane, so they haven't updated the site yet. Or, maybe it's a re-release of RC-3 and versiontracker mis-labled it as 8.50 (implying final).

I'm leaning toward the latter because traditionally the beta installer only installs betas, and the 'demo' installer only isntalls final versions. In this case the 'demo' installer is still identifying 8.40 as the last final version.

I don't know if that made it more clear or more confusing...
