But for me, with a large collection of dance compilations, the biggest change is gapless playback. And, iTunes 7 now includes the iPod firmware updater as part of the iPod pane. It immediately recognized that my 5G (60gb) iPod needed the 1.2 firmware udpate, downloaded, updated, and restarted my iPod.

Now I get gapless playback across tracks (after going through my library and explicitly setting "Part of a Gapless Album" for each track/album.
