Tiger's free Disc Utility (find it in the Utilities folder in the Applications folder) does exactly the same thing. I leave aliases of Disc Utility alongside files I regularly need to encrypt. "Encrypt This" is rather a non starter in its present form. Maybe further features will be included in updates. Until then I prefer to trust Apple and use Disc Utility.
