If you want to edit the templates: go to "/Library/Contextual Menu Items/NuFile.plugin/Contents/Resources/" and edit the template files as you wish. You can even copy new file templates here, f.e. an empty StuffIt archive, and add it to the menu.
You need to give an admin password to do that.
