I tried several ways of creating RSS feeds before coming to this piece of software and I was delighted by the friendly interface, ease of use and Excellent Flash tutorial on the developer's website.
This is shareware with payment required after 5 uses, which is a bit on the mean side, but remains good value for an iTunes compatible feed.
