iTunes doesn't allow iPod to Mac transfers in order to cut down on piracy.
I don't see why anyone would need to transfer from iPod to Mac unless they are stealing music....

iPod to Mac... - WarrenKramer
It's not just about music piracy, there are legitimate reasons for copying music from an iPod to a computer. For me, the most important is backup. I have all my music on my machine at home. One could say it is "backed up" on my iPod itself, but it is not a backup if I cannot restore the music and my carefully crafted playlists to another machine, or to a reformatted HD if my drive fails, etc. Of course I could create a backup on an external Firewire drive or something, but the iPod *IS* an external drive, and I should not be prevented from using it as one, nor be forced to buy an additional one just to back up my extensive ripped CD collection.Tuesday, April 19 2005 @ 11:41 AM PDT

let's see. one reason you might want to move ipod files over to the mac is this: let's say you do everything APPLE tells you and it messes up your system and you have to swipe it clean. let's see.. i had to do that and guess what? i lost all my iTunes. thank god i had them on my ipod....but i did lose all the iTunes i paid for. duh. that's a good reason i think.Tuesday, November 08 2005 @ 09:05 PM PST

trust me, there are legitimate reasons. For example, it would make backing up and restoring my music a heck of a lot easier - No need to fumble around with libraries and reimporting, I could just transfer all my songs back from my iPod.Reply to This
