With text editors and word processors, there is no one-size-fits-all, but after using most of the products on the market, I find Pages to be a breath of fresh air for both functionality and ease-of-use.

I have written a couple of long documents (100+ pages) using pages and it is fast and efficient. And unlike some of the high-end products, it does what it is supposed to do without a lot of interface clutter.
