Ya know, I use control-z all the time to suspend tasks in the Terminal but I never thought to try it on a GUI application... it works very well stopping and starting iTunes, Finder, etc...

I imagine if you were rendering some huge graphic in Photoshop you could stop the process to alleiviate some CPU time... very neat idea. ;)
