I have been administering a postfix server on an iMac (slot loading) running vanilla OS X 10.3.4 for a little while. I could not be happier with postfix and the fact that I found a use for an older piece of equipment. Postfix ROCKS!
We had a linux box and CGPro before that (a nice mail server, too. Kinda pricey), but owner of the company wants mail on his XServe. I am already familiar with postfix on other unix/linux systems. I spent 9 hours trying to make the SAME mail server run successfully on OS X Server 10.3.4. There was ZERO documentation about the mail system. All I could find on Apple's website was marketing garbage. What a Disaster!
After giving up in dispare, I pulled out the old iMac and installed a fresh 10.3.4 (the vanilla panther). Then I configured and launched a fully functional postfix, all in under an hour! Apple did a good job with postfix on Panther. They should have left it alone on Panther Server. If all you need is a mail server, don't bother with OS X server.
The boss still wants the mail on his XServe...
