Comparing this professional app to a widely distributed consumer game is silly. This developer's audience is much smaller, so of course the economy of scale makes them set their price accordingly. Supporting customers is expensive, and I know for sure that Rogue Amoeba has only a few employees. Plus, they have built something that simply doesn't exist anywhere else, unlike most copycat first-person shooter games out there.
And, the reason this might seem like a "toy" to the unschooled is that it is a well-made GUI which controls a very complex set of functions. For comparison, just try installing and administering a SHOUTcast server, which only works with the crappy Audion.
