This is a bug with VLC usage of OpenGL.
0.7.1 - VLC added OpenGL (for hardware acceleration) but was OFF by Default
0.7.2 - OpenGL is now ON by Default

To get your second monitor working for the moment (until this bug gets fixed)
Goto | VLC -> Preferences -> Modules -> interface -> maxosx
and change "Force a video rendering mode" to quartz
