of course if you have your iPod set up as a bootable OSX external drive like I do then simply copying the OSX system files back in finder won't help.
Re-install the OSX system to the iPod using the installer CD/DVD or open terminal app and hunt down all the ".<filename>" files and "CP" them back in unix
