ffmpeg is not the simplest to use, but its online documentation is excellent. I have read through most of the instrustions and now I understand much more about the compression process and feel comfortable with using this software.

ffmpegX is actually easy to use, and creates the highest quality movies while maintaining a minimal file size. If you want to create XviD movies (or DivX movies) this is the tool you will need.
