I've just bought N.U. 8.0 specifically for the purpose of defragmenting my HD running Panther. But it returns the following error:
'Error: "The directory structures on disk <Macintosh HD> are too large
> for the current version of Norton Utilities"'
Basically, I'm scr***d
The only thing Symantec can do for you is to send you a tech note. If you find this is worth your money, go and buy it...

I've had no problem defragging my HDs booting in OS 9 and running Norton Utilities 6.0.3 from a separate HD. This doesn't help those with newer Macs though.Defragging isn't as vital in OS X as it is in Win or OS 9 though.
