I just saw this the other day, and had not known it was possible to use a unix box as an open source IP PBX, but it was very easy to setup and I was even able to setup a PBX on my laptop for a couple of SIP phones in the office. Very Cool.

I would really like to see the GUI configuration tools, and I'm seriously thinking about dedicating a G5 for a full time IP PBX.

If you're looking for a simpler solution, with all hardware and software included, try PhoneValet Message Center (http://www.parliant.com/phonevalet/). Although it doesn't do everything that Asterisk does, it takes voicemail, does dialing and call recordings and lots more, and it's a great Mac OS X app that's easy to use and works out of the box.
