Wow...just what I was looking for! Please add to your description that one of your features is audio extraction. And explain that you do not interface with the ReplayTV. These guys ought to be able to figure that out, but apparently they can't. Five stars!
Thank you so much. You have no idea how happy I am...

has potential, but I am ending up with VCD's that have audio with only a single frame of video static for the whole thing. The Video file is encoding into only an 8K file. Would love to see this progress. 2 stars since I looks close, but doesn't work for me.
1) Download from your replayTV. Try mReplay. Good, simple albeit slow.
2) Transcode using ffmpegX
It's a GUI front end to command line binaries.
This app is drag-n-drop simple and will transcode to create a ready-to-burn DVD.
Follow the installation instructions closely: you must download the 3 command line binary applications it uses seperately, but it's worth the initial hassle.
Looks like this will be useful tool for other conversion needs.
ffmpegX will create the VIDEO_TOS folder necessary to burn a playable DVD.
3) Burn the VIDEO_TOS folder to DVD using any burning software.
Finally! A simple path from ReplayTV to DVD!
