The repository I want to configure is at /var/lib/cvsroot, but the set-up assistant won't let me type that in or browse to it.

cvs because it doesn't even support versioning yet. deltav is still a draft a long ways off and isn't planned to support complex branches and tags which most software projects need. yes, webdav with versioning will be a great tool for web sites, but for server-side and desktop applications, cvs will be the way to go for a long time now.
